Hi! I'm Lauren.

I am dedicated to helping people understand their specific nutrition needs and become experts of their own bodies. My approach is evidence-based, focused on the individual, with a personal touch, as someone who knows how to survive disease.

Who I work with: people with diabetes, athletes, families, and healthy lifestyle seekers.

My expertise includes getting results through a plant-based foundation, while working through life’s barriers and exposing an individuals strengths. No fads or misguided age-old general “diabetic diet” recommendations will come from me.

Professionally, I'm a Registered Dietitian Nutritionist (RDN), Certified Diabetes Educator (CDE), public speaker, fitness instructor, and proudly live my life as a healthy person with Type 1 Diabetes. Like many of you, my story began with the realization that I needed to change my eating habits and exercise routine. I also needed to fully embrace diabetes, but most of all, I needed motivation to want to live intentionally.

In the pursuit of healthiness, I realized what I had been missing and that was personal connection. I needed to know there was someone out there with type 1 who was doing amazing things and could help me prove to myself that I could get better.

My search began with a cycling team that included a few guys with type 1 who raced across America - and won. Then came the discovery of Olympians, ultra athletes, and everyday folks that were on a higher level of fitness. Finding people with the admirable qualities I was looking for gave me permission to go to work on myself.

The first step is always the hardest but I found my inspiration, started slowly, and refused to quit. One small step lead to another as I found consciousness and peace in the pursuit of a healthy body by learning more about where food comes from. This learning process empowered me to make educated choices about food. From this point onward, there was no turning back to the old ways of managing diabetes that I was taught growing up.

From teaching myself how to shop for groceries and cook nutritious meals to taking my first indoor cycling class and dropping much needed body fat. I didn't realize it at the time, but I was becoming an athlete and a much more health conscious person. After a handful of unexpected events I was faced with a moment of serious decision making, which lead to the pursuit of becoming a Registered Dietitian, and perhaps the most daunting task of my life so far. All odds were against me in this incredibly competitive program, but then I learned to tap into my strengths and put them to use.

I could define myself in many ways based on my experiences, but most of all I am determined, strong-willed, and not a quitter. So, I found a way. Now, my role is to pay it forward and share my knowledge by inspiring others to find the fire within themselves.

We are constantly looking outward for answers to better health but the solutions start from within. I believe the greatest investment we can make is in our minds and bodies. Our minds are meant to be sharpened and our bodies were designed for movement. I’m here to help you connect the two together to make better decisions about your health.
